his egg foo young recipe has a delicious sauce that goes on top of the patties. This recipe is unique because it was necessary to pay for my red 1966 Volkswagen Bug while in high school, I acquired it by working at a Chinese restaurant. The recipe card is torn and stained now, but the dish is the most delicious egg foo young I've experienced. To serve, place the egg patty over steamed rice and pour the sauce over it.- Prep Time:

Ingredients
- 8 ounces fresh bean sprouts
- 1 cup cooked small shrimp
- 4 eggs
- ⅓ cup thinly sliced green onions
- ¼ teaspoon garlic powder
- 2 tablespoons vegetable oil
- 3 cups chicken broth
- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 2 tablespoons distilled white vinegar
- 2 tablespoons soy sauce
Directions

Combine the sprouts, shrimp, eggs, green onions, and garlic in a large bowl until everything is combined.

Heat the oil in a skillet over a medium temperature. Increase the amount of egg mixture in the pan by about a half cup to create a patty. Repeat to add more patties to the pan. Working in batches, cook the fried patties until they're golden brown, approximately 4 minutes per side.

Concurrently, make the sauce: Combine the chicken broth, cornstarch, sugar, vinegar, and soy sauce in a pan over a medium-low heat; let it thicken until it resembles sauce, about 5 minutes.

Pour the gravy over the steaks.
Tips
You can substitute cooked chicken or pork for the shrimp.
